Ingredients:
- 1 block extra-firm tofu, drained and pressed
- 4 large tortillas
- 1 cup shredded cabbage
- 1 large carrot, julienned
- 1/2 cucumber, julienned
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped peanuts (optional)
- Salt and pepper to taste
- Cooking oil (for frying)
For the peanut sauce:
- 1/4 cup creamy peanut butter
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon maple syrup or honey
- 1 teaspoon sesame oil
- 1 teaspoon sriracha sauce (adjust to taste)
- 1 clove garlic, minced
- 2 tablespoons water (or more as needed)
Instructions:
- Prepare the Tofu:
- Cut the pressed tofu into thin strips.
- Heat a skillet over medium-high heat and add a bit of cooking oil.
- Add tofu strips to the skillet and season with salt and pepper.
- Cook until tofu is golden brown on all sides, about 5-7 minutes. Remove from heat and set aside.
- Make the Peanut Sauce:
- In a small bowl, whisk together peanut butter, soy sauce, lime juice, maple syrup, sesame oil, sriracha sauce, garlic, and water until smooth. Adjust consistency with more water if needed.
- Assemble the Wraps:
- Warm tortillas in a dry skillet for a few seconds on each side.
- Spread a generous spoonful of peanut sauce onto each tortilla.
- Layer shredded cabbage, julienned carrot, cucumber, cooked tofu strips, chopped cilantro, and chopped peanuts (if using) onto the center of each tortilla.
