Steak and Kidney Pie

Steak and Kidney Pie is a beloved British comfort food classic that combines tender chunks of beef steak and kidney, enveloped in a rich and savory gravy, all encased in a golden-brown, flaky pastry crust. This hearty and satisfying dish is perfect for a cozy family dinner or a special occasion. Follow this simple recipe to create a taste of traditional British cuisine in your own kitchen.

Ingredients:

  • 1.5 pounds (700g) beef steak, cut into bite-sized pieces
  • 4 oz (115g) lamb or beef kidney, diced (optional, but traditional)
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 2 carrots, peeled and diced
  • 2 tablespoons all-purpose flour
  • 2 cups (475ml) beef stock
  • 1 cup (240ml) ale or stout (optional)
  • 1 bay leaf
  • 1 sprig fresh thyme (or 1 teaspoon dried thyme)
  • Salt and black pepper to taste
  • 2 tablespoons vegetable oil
  • Pastry dough (store-bought or homemade)

Instructions:

  1. Prepare the Filling:
    • Heat the vegetable oil in a large, heavy-bottomed pan over medium-high heat.
    • Add the chopped onions and garlic, and sauté until they become translucent.
    • Add the diced steak and kidney, if using, and cook until they brown on all sides.
    • Sprinkle the flour over the meat and stir well to coat, allowing it to cook for a couple of minutes to eliminate the raw flour taste.
    • Pour in the beef stock and ale (if using), stirring constantly to create a smooth gravy.
    • Add the carrots, bay leaf, and thyme. Season with salt and pepper.
    • Reduce the heat to low, cover, and let it simmer for about 1.5 to 2 hours or until the meat is tender and the flavors meld. Stir occasionally and add more stock if needed to maintain a thick, stew-like consistency.
  2. Prepare the Pastry:
    • While the filling is simmering, preheat your oven to 375°F (190°C).
    • Roll out the pastry dough on a floured surface to fit the size of your pie dish.
  3. Assemble the Pie:
    • Once the filling is ready, remove the bay leaf and thyme sprig.
    • Transfer the filling to a deep pie dish.
    • Cover the dish with the rolled-out pastry, pressing the edges to seal.
    • Cut a small slit in the center of the pastry to allow steam to escape.
  4. Bake the Pie:
    • Place the pie in the preheated oven and bake for about 30-40 minutes, or until the pastry is golden-brown and crispy.
  5. Serve:
    • Remove the pie from the oven and allow it to cool slightly before serving.
    • Slice and serve your delicious Steak and Kidney Pie with your choice of side dishes, such as mashed potatoes and peas.
