Ingredients:

  • 12 ounces macaroni pasta
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 cups fresh spinach leaves
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 cup breadcrumbs (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish with cooking spray or butter and set aside.
  2. Cook the macaroni pasta according to the package instructions until al dente. Drain and set aside.
  3. In a large skillet, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until softened and fragrant, about 2-3 minutes.
  4. Add sliced mushrooms to the skillet and cook until they release their moisture and start to brown, about 5-7 minutes.
  5. Stir in fresh spinach leaves and cook until wilted, about 2 minutes. Season with salt and pepper to taste.
  6. Sprinkle flour over the mushroom and spinach mixture, stirring constantly for 1-2 minutes to cook out the raw flour taste.
  7. Gradually pour in the milk, stirring constantly to prevent lumps from forming. Cook until the sauce thickens, about 5 minutes.
  8. Remove the skillet from heat and stir in shredded cheddar and mozzarella cheese until melted and smooth. Add nutmeg if desired.
  9. Add the cooked macaroni pasta to the cheese sauce, stirring until well combined. Transfer the mixture to the prepared baking dish.
  10. If desired, sprinkle breadcrumbs evenly over the top of the macaroni mixture.
  11. Bake in the preheated oven for 20-25 minutes, or until bubbly and golden brown on top.
  12. Remove from the oven and let it cool for a few minutes before serving. Garnish with chopped fresh parsley and enjoy!
