Ingredients:

  • 500g boneless chicken breast, cut into chunks
  • 1 cup plain yogurt
  • 2 tablespoons ginger-garlic paste
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt to taste
  • Olive oil, for grilling
  • Sub rolls, lettuce, tomatoes, and yogurt sauce, for serving

Instructions:

  1. In a bowl, combine yogurt, ginger-garlic paste, lemon juice, ground cumin, ground coriander, paprika, turmeric powder, cayenne pepper, and salt. Mix well to form a marinade.
  2. Add the chicken chunks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
  3. Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers.
  4. Brush the grill with olive oil to prevent sticking. Grill the chicken skewers for about 6-8 minutes on each side, or until fully cooked and charred on the edges.
  5. While the chicken is grilling, lightly toast the sub rolls.
  6. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
  7. To assemble the subs, spread a generous amount of yogurt sauce on the toasted sub rolls. Place a layer of lettuce and tomato slices on one side of the roll.
  8. Remove the chicken from the skewers and place it on top of the veggies.
  9. Drizzle with extra yogurt sauce if desired, then cover with the other half of the sub roll.
  10. Serve immediately and enjoy the spicy goodness of your Chicken Tikka Sub!
