Ingredients:
- 500g boneless chicken breast, cut into chunks
- 1 cup plain yogurt
- 2 tablespoons ginger-garlic paste
- 1 tablespoon lemon juice
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon paprika
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt to taste
- Olive oil, for grilling
- Sub rolls, lettuce, tomatoes, and yogurt sauce, for serving
Instructions:
- In a bowl, combine yogurt, ginger-garlic paste, lemon juice, ground cumin, ground coriander, paprika, turmeric powder, cayenne pepper, and salt. Mix well to form a marinade.
- Add the chicken chunks to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld.
- Preheat your grill to medium-high heat. Thread the marinated chicken onto skewers.
- Brush the grill with olive oil to prevent sticking. Grill the chicken skewers for about 6-8 minutes on each side, or until fully cooked and charred on the edges.
- While the chicken is grilling, lightly toast the sub rolls.
- Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.
- To assemble the subs, spread a generous amount of yogurt sauce on the toasted sub rolls. Place a layer of lettuce and tomato slices on one side of the roll.
- Remove the chicken from the skewers and place it on top of the veggies.
- Drizzle with extra yogurt sauce if desired, then cover with the other half of the sub roll.
- Serve immediately and enjoy the spicy goodness of your Chicken Tikka Sub!
