Shrimp Tacos with Mango Salsa

Imagine the flavours of the tropics colliding in one fabulous hand-held meal, and what you’ve got is this tempting shrimp taco. Zingy mango salsa, succulent shrimp, creamy avocado, and good old black beans nestle cozily in a whole wheat tortilla, turning an ordinary weeknight dinner into a fiesta. So, roll up your sleeves and let’s taco ’bout how to whip up this little gem.

Ingredients:

  • 400g shrimp, peeled and deveined
  • 8 whole wheat tortillas
  • 2 ripe mangos, peeled and diced
  • 1 medium red onion, finely chopped
  • 1 jalapeno, seeds removed and finely chopped
  • Juice of 1 lime, plus extra wedges for serving
  • Handful of fresh cilantro, chopped
  • 1 can black beans, drained and rinsed
  • 2 ripe avocados, peeled and sliced
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Mango Salsa: In a bowl, mix the diced mango, chopped red onion, jalapeno, lime juice, and cilantro. Stir until well combined and set aside. This sassy salsa will allow the sweet mango to macerate with the tangy lime and spicy jalapeno, resulting in a truly delectable topping for your tacos.
  2. Cook the Shrimp: Heat the olive oil in a large frying pan over medium heat. Add the shrimp, season with salt and pepper, and cook for about 2-3 minutes on each side, or until they are pink and opaque. Remove from heat and set aside.
  3. Heat the Tortillas: In the same pan, reduce the heat to low and add the tortillas, one at a time. Warm them up for about 20-30 seconds on each side. You’re looking for a slightly toasted surface with a warm and pliable tortilla. Wrap them in a clean tea towel to keep them warm as you continue with the rest.
  4. Assemble the Tacos: Now for the fun part, the assembly! Lay a warmed tortilla flat on your plate. Add a generous spoonful of black beans down the centre. Layer on some of the cooked shrimp and a few slices of avocado. Top it all off with a healthy dollop of your homemade mango salsa.
  5. Serve: Arrange your taco masterpieces on a platter, garnish with extra cilantro if desired, and serve with additional lime wedges on the side. Encourage your diners to give their taco a good squeeze of lime right before tucking in, enhancing all the wonderful flavours.
  6. Optional: For the adults in the room, a cold cerveza or a glass of crisp white wine pairs rather well with this dish.
