Nalesniki – Polish Pancakes à la Marie Curie

Ingredients:

1 cup all-purpose flour

1 cup milk

2 eggs

2 tablespoons sugar

1 teaspoon vanilla extract

A pinch of salt

Filling: 1 cup farmer’s cheese (ricotta can be used as a substitute), 2 tablespoons of honey or powdered sugar

Butter for frying

 

Instructions:

  1. In a large mixing bowl, combine flour, milk, eggs, sugar, vanilla extract, and salt. Mix until the batter is smooth.
  2. Heat a large non-stick skillet over medium heat, and add a small amount of butter to coat the surface.
  3. Pour in enough batter to thinly cover the bottom of the skillet, tilting to spread evenly.
  4. Cook the pancake for 1-2 minutes, or until the bottom is lightly golden. Carefully flip and cook for an additional 30 seconds to 1 minute.
  5. Remove the pancake from the skillet and place it on a plate. Continue with the remaining batter.
  6. To prepare the filling, mix farmer’s cheese with honey or powdered sugar.
  7. Place a spoonful of the cheese mixture in the centre of each pancake and roll it up.
  8. Serve immediately, garnished with a sprinkle of powdered sugar or a drizzle of honey.
