Ingredients:
1 cup all-purpose flour
1 cup milk
2 eggs
2 tablespoons sugar
1 teaspoon vanilla extract
A pinch of salt
Filling: 1 cup farmer’s cheese (ricotta can be used as a substitute), 2 tablespoons of honey or powdered sugar
Butter for frying
Instructions:
- In a large mixing bowl, combine flour, milk, eggs, sugar, vanilla extract, and salt. Mix until the batter is smooth.
- Heat a large non-stick skillet over medium heat, and add a small amount of butter to coat the surface.
- Pour in enough batter to thinly cover the bottom of the skillet, tilting to spread evenly.
- Cook the pancake for 1-2 minutes, or until the bottom is lightly golden. Carefully flip and cook for an additional 30 seconds to 1 minute.
- Remove the pancake from the skillet and place it on a plate. Continue with the remaining batter.
- To prepare the filling, mix farmer’s cheese with honey or powdered sugar.
- Place a spoonful of the cheese mixture in the centre of each pancake and roll it up.
- Serve immediately, garnished with a sprinkle of powdered sugar or a drizzle of honey.
