Ingredients:

For the filling:

  • 1 cup mixed dried fruits (raisins, sultanas, currants)
  • 1 medium apple, peeled, cored, and finely chopped
  • 1/4 cup candied citrus peel
  • 1/4 cup chopped almonds
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 tablespoons brandy or orange juice

For the pastry:

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 2-3 tablespoons cold water

Instructions:

  1. In a large bowl, mix all the filling ingredients together. Cover and let it sit in the refrigerator for at least an hour to allow the flavors to meld.
  2. Preheat your oven to 375°F (190°C).
  3. In a food processor, combine the flour, butter, and sugar for the pastry. Pulse until the mixture resembles breadcrumbs.
  4. Add the egg and pulse again. Gradually add the cold water, one tablespoon at a time, until the dough comes together.
  5. Turn the dough out onto a floured surface and roll it out to your desired thickness.
  6. Using a round cookie cutter, cut out circles to line a muffin tin for the pie bases. Place the circles into the tin.
  7. Fill each pastry-lined cup with a spoonful of the mince pie filling.
  8. Roll out more pastry to cut out circles for the pie tops. You can keep them plain or make a small slit in the center to allow steam to escape.
  9. Place the pastry circles on top of the filling, pressing the edges to seal.
  10. Bake in the preheated oven for 15-20 minutes or until the pastry is golden brown.
  11. Allow the mince pies to cool slightly before removing them from the tin.
  12. Dust with powdered sugar for a festive finish.
