Indulge in the vibrant flavors of the Mediterranean with this scrumptious falafel wrap. Crisp, golden falafel balls are nestled in a warm, pillowy pita alongside fresh vegetables, tangy tzatziki sauce, and a sprinkle of feta cheese, creating a satisfying meal bursting with Mediterranean goodness.

Ingredients:

  • 1 cup dried chickpeas, soaked overnight
  • 1 small onion, roughly chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon baking soda
  • Salt and pepper to taste
  • Oil for frying
  • Pita bread
  • Toppings: shredded lettuce, diced tomatoes, sliced cucumbers, crumbled feta cheese

Tzatziki Sauce:

  • 1 cup Greek yogurt
  • 1/2 cucumber, grated and squeezed to remove excess water
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper to taste

Instructions:

  1. Rinse the soaked chickpeas and drain well. Place them in a food processor along with the onion, garlic, parsley, cilantro, cumin, coriander, baking soda, salt, and pepper. Pulse until the mixture is finely ground but not pureed.
  2. Transfer the falafel mixture to a bowl, cover, and refrigerate for at least 1 hour to firm up.
  3. While the falafel mixture chills, prepare the tzatziki sauce by combining the Greek yogurt, grated cucumber, garlic, lemon juice, dill, salt, and pepper in a bowl. Stir well and refrigerate until ready to use.
  4. Heat oil in a deep fryer or skillet to 350°F (175°C).
  5. Shape the falafel mixture into small balls or patties.
  6. Fry the falafel in batches until golden brown and crispy, about 4-5 minutes. Remove with a slotted spoon and drain on paper towels.
  7. Warm the pita bread in the oven or on a skillet.
  8. To assemble the wraps, spread a generous spoonful of tzatziki sauce on each pita bread. Top with falafel, lettuce, tomatoes, cucumbers, and crumbled feta cheese.
  9. Roll up the wraps, securing them with foil or parchment paper if needed.
  10. Serve immediately and enjoy the Mediterranean flavors!
