Lobster Bisque is a sumptuous and velvety soup that epitomizes culinary indulgence. This classic French dish is a celebration of the rich, sweet flavor of lobster, enhanced by a harmonious blend of aromatics, cream, and a touch of brandy or cognac. Ingredients:

  • 2 live lobsters (about 1 1/2 pounds each)
  • 1/2 cup unsalted butter
  • 1 onion, finely chopped
  • 1 carrot, finely chopped
  • 1 celery stalk, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1/4 cup tomato paste
  • 1/2 cup brandy or cognac
  • 4 cups fish or lobster stock
  • 2 cups heavy cream
  • 1 bay leaf
  • 1 teaspoon thyme leaves
  • Salt and pepper to taste
  • Chives or fresh parsley for garnish

Instructions:

  1. Prepare the Lobsters:
    • Bring a large pot of salted water to a boil.
    • Plunge the lobsters headfirst into the boiling water and cook for about 8-10 minutes.
    • Remove the lobsters and let them cool. Once cooled, crack the shells and remove the meat. Chop the meat into bite-sized pieces and set aside. Save the shells for later use.
  2. Make the Stock:
    • In the same pot, melt 2 tablespoons of butter and sauté the lobster shells, onion, carrot, celery, and garlic until they are lightly browned.
    • Stir in the tomato paste and cook for an additional 2 minutes.
    • Add the brandy or cognac, scraping up any browned bits from the bottom of the pot.
    • Pour in the fish or lobster stock and bring the mixture to a simmer. Let it cook for about 30-40 minutes, allowing the flavors to meld.
  3. Strain the Stock:
    • Strain the stock through a fine mesh sieve, discarding the solids. You should be left with a rich lobster-infused liquid.
  4. Prepare the Bisque:
    • In a large pot, melt the remaining butter and whisk in the flour to create a roux. Cook for 2-3 minutes until it is golden brown.
    • Gradually whisk in the lobster stock, ensuring a smooth consistency.
    • Add the heavy cream, bay leaf, and thyme. Simmer the bisque for 15-20 minutes, allowing it to thicken.
    • Season with salt and pepper to taste.
  5. Finish and Serve:
    • Stir in the chopped lobster meat and let it simmer for an additional 5 minutes.
    • Remove the bay leaf and discard.
    • Ladle the lobster bisque into bowls, garnish with chives or fresh parsley, and serve immediately.
