Jamaican Jerk Grilled Snapper

Ingredients:

  • 4 whole red snappers, cleaned
  • For the Jerk Marinade:
  • 1/2 cup chopped green onions
  • 1/4 cup soy sauce
  • 1/4 cup vinegar
  • 1/4 cup orange juice
  • 2 tablespoons jerk seasoning
  • 1 tablespoon brown sugar
  • 1 teaspoon allspice
  • 3 cloves garlic
  • 1 Scotch bonnet pepper, seeds removed

Instructions:

  1. In a blender, combine all the marinade ingredients and blend until smooth.
  2. Make diagonal cuts on each side of the snappers.
  3. Marinate the snappers in the jerk marinade for at least 2 hours.
  4. Preheat the grill to medium-high heat.
  5. Grill the snappers for about 7-8 minutes on each side, until the skin is crisp and the fish is cooked through.
