Ingredients:
- 4 whole red snappers, cleaned
- For the Jerk Marinade:
- 1/2 cup chopped green onions
- 1/4 cup soy sauce
- 1/4 cup vinegar
- 1/4 cup orange juice
- 2 tablespoons jerk seasoning
- 1 tablespoon brown sugar
- 1 teaspoon allspice
- 3 cloves garlic
- 1 Scotch bonnet pepper, seeds removed
Instructions:
- In a blender, combine all the marinade ingredients and blend until smooth.
- Make diagonal cuts on each side of the snappers.
- Marinate the snappers in the jerk marinade for at least 2 hours.
- Preheat the grill to medium-high heat.
- Grill the snappers for about 7-8 minutes on each side, until the skin is crisp and the fish is cooked through.
