Enchiladas

Enveloped in a rich sauce and cheese, enchiladas are a beloved Mexican dish offering warmth and comfort.

Ingredients:

  • Tortillas
  • 300g chicken, cooked and shredded
  • 2 cups enchilada sauce (available at stores or homemade)
  • 200g grated cheese (like cheddar or Monterey Jack)
  • 1 onion, chopped
  • Fresh coriander, chopped
  • Sour cream and avocado slices for serving

Instructions:

  1. Preheat oven to 180°C.
  2. In a pan, sauté onions until translucent. Add shredded chicken and a ladle of enchilada sauce. Mix well.
  3. Spoon the mixture into tortillas, roll them up, and place in a baking dish.
  4. Pour over the rest of the enchilada sauce and sprinkle cheese on top.
  5. Bake until cheese is melted and bubbly.
  6. Serve with sour cream, avocado, and a sprinkle of fresh coriander.
