Ingredients:
- Tortillas
- 300g chicken, cooked and shredded
- 2 cups enchilada sauce (available at stores or homemade)
- 200g grated cheese (like cheddar or Monterey Jack)
- 1 onion, chopped
- Fresh coriander, chopped
- Sour cream and avocado slices for serving
Instructions:
- Preheat oven to 180°C.
- In a pan, sauté onions until translucent. Add shredded chicken and a ladle of enchilada sauce. Mix well.
