Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg
- 1 cup milk
- 2 tablespoons peanut butter
- 1 ripe banana, mashed
- Butter or oil for cooking, as needed
Instructions:
- In a bowl, combine the flour, sugar, baking powder, and salt.
- In another bowl, mix the egg, milk, peanut butter, and mashed banana.
- Mix the wet ingredients into the dry until combined.
- Heat a skillet over medium heat and add a little butter or oil.
- Pour ¼ cup of batter onto the skillet for each pancake.
- Cook until bubbles appear on the surface and the edges look set, then flip and cook for an additional 1-2 minutes.
- Serve warm with extra slices of banana and a drizzle of honey or maple syrup.
