Ingredients:
- 8 lamb chops
- 1/2 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon fresh thyme, chopped
- 2 tablespoons Dijon mustard
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
- In a bowl, combine Parmesan, breadcrumbs, parsley, thyme, salt, and pepper.
- Brush each lamb chop with Dijon mustard.
- Press the lamb chops into the breadcrumb mixture, coating them evenly on both sides.
- Preheat the oven to 375°F (190°C) and heat olive oil in an oven-safe skillet over medium-high heat.
- Sear the lamb chops for about 2 minutes on each side until they’re golden brown.
- Transfer the skillet to the preheated oven and bake for about 10-12 minutes for medium-rare.
- Let the lamb chops rest for 5 minutes before serving. Pair them with a side of roasted vegetables or a simple salad for a complete meal.
