Creamy Miso Ramen

Ramen, a popular Japanese noodle dish, varies across regions, but a bowl of creamy miso ramen is the epitome of comfort during chilly seasons.

Ingredients:

  • 200g ramen noodles
  • 1 tbsp oil
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 3 tbsp white miso paste
  • 1 tbsp soy sauce
  • 1 litre chicken or vegetable stock
  • 200ml coconut milk
  • Toppings: Sliced spring onions, boiled egg, nori, and sesame seeds

Instructions:

  1. Sauté garlic and ginger in oil until fragrant.
  2. Add miso paste, stirring well. Pour in stock, soy sauce, and bring to a simmer.
  3. Stir in coconut milk. Adjust seasoning.
  4. Cook ramen noodles as per package instructions.
  5. Serve broth over noodles and add desired toppings.
