Ingredients:

For the Pie Crust:

  • 2 1/2 cups (315g) all-purpose flour
  • 1 teaspoon salt
  • 1 cup (230g) unsalted butter, cold and cubed
  • 6-8 tablespoons ice water

For the Apple Filling:

  • 6-7 cups (about 6-7 medium-sized) apples, peeled, cored, and thinly sliced (use a mix of sweet and tart varieties)
  • 3/4 cup (150g) granulated sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 1 tablespoon unsalted butter, cut into small pieces

Instructions:

  1. Prepare the Pie Crust:
    • In a large mixing bowl, combine the flour and salt.
    • Add the cold, cubed butter to the flour mixture.
    • Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
    • Gradually add ice water, one tablespoon at a time, mixing gently with a fork until the dough just comes together.
    • Divide the dough into two equal portions, shape them into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  2. Preheat the Oven:
    • Preheat your oven to 425°F (220°C).
  3. Prepare the Apple Filling:
    • In a large bowl, combine the sliced apples, granulated sugar, flour, ground cinnamon, ground nutmeg, and lemon juice. Toss until the apples are evenly coated.
  4. Roll Out the Pie Crust:
    • On a floured surface, roll out one of the chilled pie crust discs into a circle large enough to line a 9-inch (23 cm) pie dish.
  5. Assemble the Pie:
    • Place the rolled-out crust into the pie dish, pressing it gently into the bottom and up the sides.
    • Pour the prepared apple filling into the crust, spreading it out evenly.
    • Dot the top of the filling with small pieces of butter.
  6. Roll Out the Top Crust:
    • Roll out the second pie crust disc into a circle large enough to cover the filling.
    • Carefully place it over the apples.
  7. Crimp and Vent the Pie:
    • Trim any excess crust hanging over the edges and crimp the edges of the crust together to seal the pie.
    • Cut a few small slits or create decorative vents in the top crust to allow steam to escape.
  8. Bake the Pie:
    • Place the pie in the preheated oven and bake for 45-55 minutes, or until the crust is golden-brown and the filling is bubbling.
    • If the edges of the crust start to brown too quickly, you can cover them with aluminum foil.
  9. Cool and Serve:
    • Allow the apple pie to cool on a wire rack for at least an hour before serving. This helps the filling set.
    • Serve warm or at room temperature with your choice of toppings, such as vanilla ice cream or whipped cream.
