Ingredients:
- 8 oz fettuccine
- 1/2 cup unsalted butter
- 1 cup grated Parmesan cheese
- Salt to taste
- Freshly ground black pepper
- A pinch of nutmeg
- Fresh parsley for garnish
Instructions:
- Cook the fettuccine according to the package instructions. Drain, reserving 1 cup of pasta water.
- In a large skillet, melt the butter over low heat. Add half of the Parmesan cheese and whisk until it starts to melt.
- Slowly add the reserved pasta water, whisking constantly until a creamy sauce forms.
- Add the cooked fettuccine to the skillet, tossing to combine.
- Remove from heat, and quickly mix in the remaining Parmesan cheese, salt, black pepper, and nutmeg.
- Serve immediately, garnished with fresh parsley.
