1. Preheat the Oven:

a. Preheat your oven to 375°F (190°C). Position the rack in the lower third of the oven.

2. Prepare the Ramekins:

a. Butter the insides of four 6-ounce ramekins generously. Coat the buttered surfaces with a layer of granulated sugar, tapping out any excess.

3. Melt the Chocolate:

a. Place the chopped chocolate in a heatproof bowl set over a pan of simmering water (double boiler). Stir the chocolate occasionally until it’s completely melted and smooth. Remove it from the heat and set it aside to cool slightly.

4. Prepare the Chocolate Mixture:

a. In a separate bowl, whisk together the egg yolks and 1/4 cup of granulated sugar until the mixture is pale and slightly thickened.

b. Gradually pour the melted chocolate into the egg yolk mixture, whisking continuously to combine. Stir in the vanilla extract.

5. Beat the Egg Whites:

a. In a clean, dry bowl, beat the egg whites until they become frothy.

b. Add a pinch of salt and the cream of tartar to the egg whites, and continue to beat until soft peaks form.

c. Gradually add 1-2 tablespoons of granulated sugar while continuing to beat the egg whites. Beat until stiff, glossy peaks form.

6. Fold the Egg Whites into the Chocolate Mixture:

a. Gently fold one-third of the beaten egg whites into the chocolate mixture to lighten it.

b. Carefully fold in the remaining egg whites until the mixture is well combined. Be gentle to maintain the airiness of the egg whites.

7. Fill the Ramekins:

a. Divide the soufflé mixture evenly among the prepared ramekins, filling them to the top. Smooth the tops with a spatula.

8. Bake:

a. Place the filled ramekins on a baking sheet and transfer them to the preheated oven.

b. Bake for 12-15 minutes, or until the soufflés have puffed up and the tops are set. They should still be slightly soft in the center.

9. Serve:

a. Dust the tops of the soufflés with cocoa powder or powdered sugar if desired.

b. Serve the chocolate soufflés immediately, as they will begin to deflate as they cool. You can serve them with a scoop of ice cream, whipped cream, or fresh berries, if you like.
