Instructions:

For the Pastry:

  1. Prepare the Pastry:
    • In a large mixing bowl, combine the all-purpose flour and a pinch of salt.
    • Add the cold, cubed unsalted butter to the flour.
    • Use a pastry cutter or your fingertips to work the butter into the flour until the mixture resembles coarse crumbs.
  2. Add Cold Water:
    • Gradually add cold water, a tablespoon at a time, and mix until the dough comes together.
    • Form the dough into a ball, wrap it in plastic wrap, and refrigerate it for at least 30 minutes.

For the Filling:

  1. Caramelize the Onions:
    • In a skillet, melt the 2 tablespoons of butter over medium-low heat.
    • Add the thinly sliced onions and cook, stirring occasionally, until they become soft, golden, and caramelized. This process may take about 20-30 minutes. Set aside to cool.
  2. Prepare the Cheese and Onion Filling:
    • In a mixing bowl, combine the grated cheddar cheese, beaten eggs, milk, salt, black pepper, and ground nutmeg (if using).
    • Add the caramelized onions to the mixture and stir until well combined.
  3. Assemble the Pie:
    • Preheat your oven to 375°F (190°C).
    • Roll out the chilled pastry on a floured surface to line a pie dish.
    • Pour the cheese and onion filling into the pastry-lined dish.
  4. Bake:
    • Bake in the preheated oven for 30-35 minutes, or until the pie is golden brown and the filling is set.
