Indulge in the comforting fusion of smoky bacon, tender leeks, and creamy cheese sauce in this irresistible twist on a classic comfort dish. Each bite is a harmonious blend of savory flavors, with the rich creaminess of the cheese sauce complementing the salty crunch of bacon and the mild sweetness of leeks. Perfect for cozy gatherings or a satisfying weeknight dinner.

Ingredients:

  • 300g macaroni pasta
  • 6 slices of bacon, diced
  • 2 leeks, thinly sliced
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups grated cheddar cheese
  • Salt and pepper to taste
  • 1/4 teaspoon nutmeg (optional)
  • 1/4 cup breadcrumbs (optional)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease a baking dish and set aside.
  2. Cook the macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the rendered fat in the pan.
  4. In the same skillet, add the sliced leeks and sauté until they are soft and translucent, about 5-7 minutes. Remove the leeks from the skillet and set aside.
  5. In the same skillet, melt the butter over medium heat. Stir in the flour to create a roux, cooking for 1-2 minutes until it turns golden brown.
  6. Gradually whisk in the milk, stirring constantly to avoid lumps. Cook until the sauce thickens, about 5 minutes.
  7. Remove the skillet from heat and stir in the grated cheddar cheese until melted and smooth. Season with salt, pepper, and nutmeg (if using).
  8. Add the cooked macaroni, crispy bacon, and sautéed leeks to the cheese sauce, stirring until well combined.
  9. Transfer the mixture to the prepared baking dish, spreading it out evenly.
  10. If desired, sprinkle breadcrumbs over the top of the macaroni cheese for an extra crunchy topping.
  11. Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
  12. Once done, remove from the oven and let it cool for a few minutes before serving.
