Indulge in the comforting fusion of smoky bacon, tender leeks, and creamy cheese sauce in this irresistible twist on a classic comfort dish. Each bite is a harmonious blend of savory flavors, with the rich creaminess of the cheese sauce complementing the salty crunch of bacon and the mild sweetness of leeks. Perfect for cozy gatherings or a satisfying weeknight dinner.
Ingredients:
- 300g macaroni pasta
- 6 slices of bacon, diced
- 2 leeks, thinly sliced
- 3 tablespoons butter
- 3 tablespoons all-purpose flour
- 2 cups milk
- 2 cups grated cheddar cheese
- Salt and pepper to taste
- 1/4 teaspoon nutmeg (optional)
- 1/4 cup breadcrumbs (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Preheat your oven to 375°F (190°C). Grease a baking dish and set aside.
- Cook the macaroni according to package instructions until al dente. Drain and set aside.
- In a large skillet, cook the diced bacon over medium heat until crispy. Remove the bacon from the skillet and set aside, leaving the rendered fat in the pan.
- In the same skillet, add the sliced leeks and sauté until they are soft and translucent, about 5-7 minutes. Remove the leeks from the skillet and set aside.
- In the same skillet, melt the butter over medium heat. Stir in the flour to create a roux, cooking for 1-2 minutes until it turns golden brown.
- Gradually whisk in the milk, stirring constantly to avoid lumps. Cook until the sauce thickens, about 5 minutes.
- Remove the skillet from heat and stir in the grated cheddar cheese until melted and smooth. Season with salt, pepper, and nutmeg (if using).
- Add the cooked macaroni, crispy bacon, and sautéed leeks to the cheese sauce, stirring until well combined.
- Transfer the mixture to the prepared baking dish, spreading it out evenly.
- If desired, sprinkle breadcrumbs over the top of the macaroni cheese for an extra crunchy topping.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
- Once done, remove from the oven and let it cool for a few minutes before serving.
- Garnish with chopped fresh parsley before serving. Enjoy your delicious bacon and leek macaroni cheese!
