Classic Ratatouille

So, here’s to the Classic Ratatouille – a dish that transports you to the heart of France with every spoonful. Your dinner table just got a passport to flavourville, and your taste buds? Well, they’re probably composing love letters to the Eiffel Tower as we speak. Check the recipe:

Ingredients:

  • Aubergine, sliced: 1
  • Courgette, sliced: 1
  • Red bell pepper, sliced: 1
  • Onion, chopped: 1
  • Tomatoes, chopped: 400g
  • Olive oil: 4 tbsp
  • Garlic cloves, minced: 2
  • Fresh basil, thyme and rosemary
  • Salt and pepper to taste

Instructions:

  1. In a pan, sauté onions in olive oil until translucent. Add garlic.
  2. Add tomatoes, simmer until they break down. Add herbs, salt, and pepper.
  3. In separate pans, lightly fry aubergine, courgette, and bell pepper slices in olive oil.
  4. Layer vegetable slices in a baking dish, interspersing with sauce. Bake for 30 minutes at 180°C.
