Stir-Fried Chicken and Vegetables: A Colorful and Nutrient-Packed Delight

And the flavour medley? Well, it’s a full-on comedy of taste. The garlic waltzes in with the confidence of a stand-up comedian, leaving your taste buds chuckling with delight. Then comes the mushrooms, strutting in like they own the joint, adding a texture that’s as cheeky as a playful wink across the room.

Now, let’s not forget about the supporting cast—the sides. Just imagine a bed of herbed couscous stepping onto the scene with the grace of a debutante at a ball. Or a side of roasted garlic potatoes, delivering a crispy performance that’s practically a standing ovation for your taste buds. To whip up this stir-fry, follow these steps:

Ingredients:

  • 4 boneless, skinless chicken breasts, thinly sliced
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli, snap peas, etc.), sliced
  • 3 tablespoons soy sauce
  • 2 teaspoons minced fresh ginger
  • 2 cloves garlic, minced
  • 1 tablespoon honey or brown sugar
  • 2 tablespoons vegetable oil
  • Cooked rice or noodles for serving

Instructions:

  1. In a bowl, whisk together the soy sauce, minced ginger, minced garlic, and honey (or brown sugar) to create the stir-fry sauce. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over high heat.
  3. Add the sliced chicken to the hot skillet and stir-fry until cooked through. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the remaining tablespoon of oil and toss in the mixed vegetables. Stir-fry for a few minutes until they are slightly tender but still crisp.
  5. Push the vegetables to the side of the skillet and pour the prepared sauce into the empty space. Allow the sauce to bubble and thicken slightly.
  6. Add the cooked chicken back to the skillet and toss everything together to coat the chicken and vegetables with the sauce.
  7. Serve the stir-fried chicken and vegetables over cooked rice or noodles. Garnish with chopped green onions or sesame seeds, if desired.
