Crusted Parmesan and Herb Lamb Chops

Ingredients:

  • 8 lamb chops
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • 2 tablespoons Dijon mustard
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. In a bowl, combine Parmesan, breadcrumbs, parsley, thyme, salt, and pepper.
  2. Brush each lamb chop with Dijon mustard.
  3. Press the lamb chops into the breadcrumb mixture, coating them evenly on both sides.
  4. Preheat the oven to 375°F (190°C) and heat olive oil in an oven-safe skillet over medium-high heat.
  5. Sear the lamb chops for about 2 minutes on each side until they’re golden brown.
  6. Transfer the skillet to the preheated oven and bake for about 10-12 minutes for medium-rare.
  7. Let the lamb chops rest for 5 minutes before serving. Pair them with a side of roasted vegetables or a simple salad for a complete meal.
