Whole Chicken Roast with Veggie Chips

Every part of the chicken can be put to use, and pairing it with chips made from vegetable peels elevates this classic dish.

Ingredients:

  • 1 whole chicken
  • Assorted vegetable peels (potatoes, carrots, parsnips)
  • Olive oil, herbs, salt, and pepper

Instructions:

  1. Season the chicken inside and out with your preferred herbs, salt, and pepper. Roast according to size and preference.
  2. Clean and save the peels from your vegetables.
  3. Toss the peels in olive oil, salt, and your choice of herbs.
  4. Spread on a baking sheet and roast at 200°C until crispy and golden.

Tip: The chicken bones can later be used to make a rich broth or stock.
