Elvis’s Peanut Butter and Banana Pancakes

Ingredients:

  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 egg
  • 1 cup milk
  • 2 tablespoons peanut butter
  • 1 ripe banana, mashed
  • Butter or oil for cooking, as needed

 

Instructions:

  1. In a bowl, combine the flour, sugar, baking powder, and salt.
  2. In another bowl, mix the egg, milk, peanut butter, and mashed banana.
  3. Mix the wet ingredients into the dry until combined.
  4. Heat a skillet over medium heat and add a little butter or oil.
  5. Pour ¼ cup of batter onto the skillet for each pancake.
  6. Cook until bubbles appear on the surface and the edges look set, then flip and cook for an additional 1-2 minutes.
  7. Serve warm with extra slices of banana and a drizzle of honey or maple syrup.
