Ingredients:
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon fine salt
- 1 cup buttermilk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- Butter or oil for cooking, as needed
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the buttermilk, egg, and melted butter.
- Add the wet ingredients to the dry ingredients and gently stir until just combined.
- Preheat a non-stick skillet over medium heat and add a small amount of butter or oil.
- Pour ¼ cup of batter onto the skillet for each pancake.
- Cook until bubbles appear on the surface and the edges look set, then flip and cook for an additional 1-2 minutes.
- Serve warm with maple syrup and butter.
