Asparagus Tempura with Soy Dipping Sauce

Ingredients:

  • 1 lb fresh asparagus
  • 1 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup ice-cold sparkling water
  • Vegetable oil for frying
  • ¼ cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 1 teaspoon sesame oil
  • 1 green onion, thinly sliced

Instructions:

  1. In a small bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, and green onions. Set aside.
  2. Trim the asparagus. In a bowl, mix flour, egg, and sparkling water to make a batter.
  3. Heat about 2 inches of vegetable oil in a deep pan over medium-high heat.
  4. Dip the asparagus spears into the batter and ensure they are well coated.
  5. Carefully place the battered asparagus in the hot oil and fry for 2-3 minutes or until golden brown and crispy.
  6. Remove with a slotted spoon and place on a paper towel to drain excess oil.
  7. Serve hot with the soy dipping sauce on the side.
