<li>Rinse the chicken under cold water and pat it dry with paper towels.</li>



<li>Zest one lemon and set the zest aside. Cut both lemons in half.</li>



<li>In a small bowl, combine the minced garlic, thyme, rosemary, parsley, lemon zest, olive oil, salt, and pepper to create the herb rub.</li>



<li>Gently loosen the skin of the chicken, being careful not to tear it, and rub half of the herb mixture underneath the skin, spreading it evenly.</li>
